02Meet the baker

Started, fed and baked by hand.

Courtney is the hands behind The Sourdough Mill — a cottage baker working in small batches out of her own kitchen in White House, Tennessee. What started as feeding a starter for her own family became a standing Wednesday table at the farmers market and a shelf at the local health food store.

Nothing here is rushed. A naturally fermented loaf takes the time it takes: the starter gets fed, the dough proofs slowly, and the bake happens when the dough says it's ready — not when a schedule says so. That's the whole difference between real sourdough and the version sold in a plastic sleeve.

Alongside the loaves are sourdough cinnamon rolls, cookies, and whatever else is in season that week.

A lot of what gets sold as "sourdough" is built with commercial yeast, dough conditioners and preservatives — authenticity traded for shelf life. This isn't that. Three ingredients, every time.
